This is a “meat eaters” sake. It pairs beautifully with steak, pork, stews, and other hearty foods.
This sake is brewed with Kameno-o rice — an ancient table rice variety — polished to 60%. The resulting sake has a bold, more umami-rich flavor and palate-cleansing acidity. This interesting and versatile sake can be served chilled — but serving it hot, especially in wintertime, really opens the aromas and flavors.
Tokubetsu means “special” in Japanese and represents a sake that highlights the best of the brewery. This sake is brewed to be paired with Iwate Prefecture’s famous Maesawa Beef.
